Setup

Print or hand-copy the essential prompt for Sustainable Restaurant Test Kitchen, then set out only paper, pencils, and the common or recycled items needed for one test. Use a tabletop representation whenever the original version mentions a room, specialized device, or digital tool; the learning comes from the decisions and evidence, not elaborate scenery.

Activity

  1. Review a sample recipe and predict which ingredient will be the most expensive or wasteful to prepare.
  2. Prepare the dish while tracking every ingredient's cost and weighing scraps thrown away.
  3. Total up the waste and cost data, discover the budget or waste target was missed, and redesign the recipe with substitutions to hit it.
  4. Serve tasting portions to customers along with a short pitch on the dish's sustainability story.

Steps

  1. Learn why food waste is a human impact: food in landfills breaks down without oxygen and releases methane, and wasted food also wastes the water, land, and energy used to grow it.
  2. Design a monitoring method: decide what to weigh (edible scraps, inedible scraps, leftovers), how to record it (grams per serving), and how to estimate water footprint using a provided chart.
  3. Prepare the original recipe and use your method to weigh and record all waste and cost.
  4. Analyze the data, find the biggest source of waste, and design ways to minimize it (use stems in a sauce, compost peels, adjust portion sizes, substitute ingredients).
  5. Prepare the redesigned recipe and monitor it with the exact same method. Calculate the percent of waste reduced.
  6. Serve tasting portions with a short pitch showing before and after waste data and the environmental science behind the changes.
